Lance Knowling is the owner and Executive Chef of Blujeen, an American restaurant that represents the struggles and triumphs of the women during the 50s and 60s era. His cuisine represents the traditional dishes of his heritage and his culinary training elevating it to new heights.

A Kansas City native, Lance’s culinary training begun at the acclaimed Laurel’s in Dallas, where he completed an apprenticeship. His next job was at the Four Seasons Las Colinas, his passion and sheer determination to succeed was undeniable, and he was soon recruited to work at the New York Marriot Marquis. Lance has been cooking in New York City hotels and restaurants since the 1980s.

In 2002, he opened Indigo Smoke Restaurant and Indigo Kitchen catering whose clients includes Queen Latifah, Whoopi Goldberg and the New York Jets. In 2010, he was one of the chefs responsible for catering the wedding of Chelsea Clinton and had the pleasure of preparing a special meal for the bride and groom, as well as dinner for President Clinton. Specializing in his unique brand of barbecue and contemporary soul food, his restaurants received rave reviews from critics and clients alike, winning "Best Of" awards for eight consecutive years. His restaurants and talents have been highlighted on The Food Network, in The New York Times, The Star Ledger, Zagat’s, New Jersey Monthly, and Best Chefs America.

Lance’s experience as Chef and restaurateur has earned him a reputation as a great talent in the restaurant world. At Blujeen, Lance presents a sophisticated yet approachable menu, encouraging diners to share both small and large plates. His vision is to create a neighborhood restaurant and contribute to Harlem’s growing reputation as a culinary destination.
